The Sunday before Halloween, George (Richard's business partner and long time buddy) and his girlfriend Jen, invited us to a Pumpkin Carving Party! We had a great time, ate some fantastic food (including this awesome chili) while we carved our pumpkins. I took over some baked brie, done 2 different ways (check below for what those were). Both George and Jen are so great with Lily and she had such a fun time with them. She spent a lot of her time looking for their kitties, but they were able to evade her for the most part!
For the brie:
The first one I made, I removed the rind from the brie, sliced it up and placed it in my brie baker (this fantastic piece of pottery we got at one of our wedding showers) with slivered almonds and I drizzled it all over with honey. We baked it at 350 for about 25 minutes.
For the other, I sliced the wheel in half and spread the inside with some apricot/peach jam. I sprinkled some slivered almonds over this and smooshed it backed together. Then I wrapped it in puff pastry and brushed it with an egg wash, sealing up all the edges. This one we also baked at 350, but it took a bit longer - closer to 35 minutes. This one was by far my favorite - so delicious and the jam and brie mixture just oozed out of the pastry each time you cut into it.
